Trequanda is well known as one of the best areas in the world for its extra virgin olive oil, an area which is definitely apt for the cultivation of the olive tree that, here is almost entirely organically grown: it rarely suffers illnesses and so doe not need chemical treatments.
Varieties cultivated: Correggiolo 80%, Moraiolo, Leccino and some Olivastra. Our olives are hand picked when they are still quite green in November and pressed in the Frantoio Talini in Montisi which uses a Pieralisi system. At Fattoria del Colle we produce extra virgin olive oil in three varieties: traditional, mono-cultivar Correggiolo and mono-cultivar Moraiolo.
Traditional extra virgin olive oil
Place of origin: Fattoria del Colle, Trequanda (SI) Altitude: 404 m above sea level.
Varieties of olives: 80% Frantoio, Moraiolo, Leccino, Pendolino (impollinator) and some Olivastra. The specialised olive grove is grown in the cone shaped method. Picking method: the olives are hand picked; they are picked one by one from the trees when they are still quite green, during November and December. Pressing method: traditional with grindstones. Extraction by continuous system.
Colour: green that in time acquires golden hues in time. Distinct aroma of artichoke. Taste, fruity, fragrant, with a spicy aftertaste. Ideal use: raw. Bottles, 0,750 and 0,500 L. Keep for a year and a half... keep the oil in the dark, and cool away from strong smells.
